AH HAH! I see you've never been subjected to the horror that is literary criticism. Let my four years of misguided college studies assist you so you don't have to do a bunch of really horrid reading.
In order for something to be considered "canon," it is supposed to have been important and influential in shaping culture. For literature, this means any number of old, boring (and a few not-boring) books that a bunch of old guys in armchairs decided are "important" and "influential" enough to be considered "canon." And god help you if you should try to say that, say, Stephen King or Harry Potter should be canon.

So, in this case, the OP is looking for anime which have been important enough to the culture to shape our little niche community into what it is today.
Dragonball Z and Tenchi Muyo are good examples. DBZ was one of the first "endless series of power-ups" animes which influenced many other works, and Tenchi was one of the first "harem" anime, of which there are countless numbers today. I would argue that something like "Raijin Z" or "Green Legend Ran" would NOT be canon, because while they are older anime, they had no bearing or influence on the culture or art of anime in the long run.
...... Glad to see that my thousands of dollars of college debt are useful SOMEWHERE, lol.
